Mixed Berry Florentines

Makes 12

  • 150g Fruit for Life Berry
  • Mix with Sultanas
  • 1 cup shredded coconut
  • 1 cup flaked almonds
  • 2 cups cornflakes
  • 395 ml condensed milk
  • 200g milk or dark chocolate

Place all ingredients except for the chocolate into a large bowl and gently mix together until all dry ingredients are coated with the condensed milk.

Place spoonfuls of the mixture onto a lined baking tray and flatten slightly creating a circle. For uniform circles place an egg ring on the tray and press spoonfuls of the mixture into the ring. Gently flatten and remove ring to create each florentine.

Bake in a preheated oven 160C for 15 mins or until lightly browned. Remove from oven and allow to cool completely on the baking tray. Melt the chocolate and spread over the bottom of each florentine. Place them on a freshly lined baking tray and refrigerate until set.
