Coconut and Apricot Slice

Makes 15

Ingredients

  • 1 cup fresh coconut, shredded
  • 100g thinly sliced Lion of Sahara Apricots
  • 125g butter, soft
  • ¼ cup golden syrup
  • ½ tsp bi carb soda
  • 1 ½ cups rolled oats
  • ½ cup brown sugar
  • ¾ cup plain flour

Preheat oven 160°C. Melt butter in a pan over a medium heat, mix golden syrup through and take off heat. Add bi carb soda – it will bubble. Combine coconut, apricots, oats, flour and sugar in a mixing bowl. Then add syrup and mix together. Place in a 20cm slice tin. Press down with back of spoon to flatten. Bake for 20 minutes. Cool then turn out and slice.
