Roast Turkey With Dried Figs, Almond & Lemon Thyme Stuffing

Ingredients
- 15 whole Lion of Sahara Figs Sliced
- 1 large turkey approximately 3.5 kilos
- 2 clove garlic, sliced
- 1 med onion, diced
- 2 cups jasmine rice, cooked
- 1 apple diced
- 1/3 cup shredded almonds
- 1 egg, raw
- 1 small bunch fresh thyme
- salt and pepper
- zest from 1 lemon
- 1 tbsn olive oil
Combine all the ingredients together to make the stuffing. Place 3/4 of the stuffing inside the turkey, place the remainder under the breast of the turkey. Rub the turkey with oil, salt and pepper. Cover with foil and cook in a preheated oven 180C - 2 hrs. Remove foil and cook for a further 1 hr or until cooked. Test with skewer until clear juices appear.
