Goji Berries and Kaffir Lime Pilaf Rice
- 150g Fruit for Life Goji Berries
- 50g shredded almonds
- 2 tbsn olive oil
- ½ onion finely chopped
- ½ tspn mustard seeds
- ½ tspn coriander seeds
- 1 tspn caraway seeds
- 8 cardamom pods
- 1 dspn curry powder
- 2 tspn ground cinnamon
- 1 tspn ground garamasala
- 1 tspn ground turmeric
- 1 tspn dried sage
- ¼ lemon zest
- ½ tspn salt
- 3 cups cooked rice
- 1 tspn brown sugar
Place onions and oil in a frying pan. Cook until transparent; add all spices and lightly sauté together. Mix Fruit for Life Dried Goji Berries, almonds and lemon zest through the spices. In a large bowl combine rice and goji berries, almonds and spices.
Serve warm or cold with your favourite Indian meals or BBQ.
