Goji Berries and Kaffir Lime Pilaf Rice

  • 150g Fruit for Life Goji Berries
  • 50g shredded almonds
  • 2 tbsn olive oil
  • ½ onion finely chopped
  • ½ tspn mustard seeds
  • ½ tspn coriander seeds
  • 1 tspn caraway seeds
  • 8 cardamom pods
  • 1 dspn curry powder
  • 2 tspn ground cinnamon
  • 1 tspn ground garamasala
  • 1 tspn ground turmeric
  • 1 tspn dried sage
  • ¼ lemon zest
  • ½ tspn salt
  • 3 cups cooked rice
  • 1 tspn brown sugar

Place onions and oil in a frying pan. Cook until transparent; add all spices and lightly sauté together. Mix Fruit for Life Dried Goji Berries, almonds and lemon zest through the spices. In a large bowl combine rice and goji berries, almonds and spices.

Serve warm or cold with your favourite Indian meals or BBQ.
