Goji Berry and Fig Energy Bites
Ingredients
- 100g Fruit for Life Goji
- Berries (or Berry Mix)
- 375g Fruit for Life
- Premium Quality Figs
- 50g pepitas
- 50g macadamia nuts
- 50g whole almonds
- 20g sesame seeds
- 20g linseeds
- 2 tbsn honey
Place figs, macadamia nuts, almonds, sesame seeds and linseed in a food processor and pulse until combined into a sticky mixture. Do not over process or the nuts will turn into
a paste. Add the Goji Berries, honey and pepitas and mix through with your hands. Press mixture into a lamington tray lined with baking paper and flatten with the palm of your hand.
Using a metal spatula carefully push the end down through the mixture dividing it into squares. Do not drag the spatula through the mixture. Refrigerate until firm.
Optional: Dip the bottom of each square in melted chocolate
or carob. This will help keep the squares firmly together.
