Goji Berry, Goats Cheese & Baby Spinach Frittata

  • 50g Fruit for Life Goji Berries
  • 50g goats cheese
  • 50g baby spinach
  • 50g pine nuts
  • 9 eggs
  • ¼ cup pouring cream
  • ½ red onion, sliced thinly
  • ½ tspn dried mixed herbs
  • ½ tspn crushed garlic
  • pinch of salt

Sauté onion, garlic and herbs in an oiled omelette pan on the stove top. Whisk egg, cream and salt together and add to the pan. Stir on medium heat until it starts to set. Stir through spinach until wilted then turn heat off. Crumble goats cheese, pine nuts and goji berries on top. Finish in a low oven 130C for around 7-10 minutes. Cool in the pan and then slice. Serve with a fresh salad.
