Mediterranean Salad with Goji Berries and Pine Nuts Tossed in Pesto Balsamic
- Fruit for Life Goji Berries
- ¼ butternut pumpkin
- ½ cup pine nuts
- 4 tomatoes
- 2 zucchini sliced
- 1 eggplant sliced
- 3 handfuls of baby spinach leaves
- 2 tbsn of Pesto
- ¼ balsamic vinegar
- 1 tspn dried herbs
- 1 tbsn Olive oil
Dice the pumpkin into 1cm cubes, roast on an oiled tray until soft. Cut tomatoes into wedges. Sprinkle with dried herbs and olive oil. Slow roast until semi dried. Char grill zucchini and eggplant on the BBQ. Place all vegetables in a mixing bowl. Wilt the spinach in a microwave for 40 seconds.
Lightly toss all the vegetables with the balsamic vinegar and place on a serving platter. Drizzle with pesto and sprinkle the Fruit for Life Goji Berries and pine nuts on top. > Print recipe
