Warm Potato, Goji Berries & Horse Radish Cream Salad

  • 50g Fruit for Life Goji Berries
  • 4 large potatoes - white
  • 1 sprig of mint leaves roughly chopped
  • 2 tspn horseradish cream
  • ¼ cup sour cream
  • pinch of salt

Cut potatoes into large cubes. Boil in water until skin starts to come away.  Drain and let stand. Mix horseradish cream, sour cream, mint and salt together and then fold through the warm potatoes. Toss in the Goji berries and place in serving bowl.

Serve with your favourite BBQ meats.
