Dried Mango Cake

Serves 8-10

Ingredients

  • 250g Fruit for Life Dried Philippine Mango Slices
  • 185g butter, room temp.
  • 1 cup caster sugar
  • 1 cup self raising flour
  • 1 tbs ground ginger
  • 3 eggs
  • 1/3 cup milk
  • zest of 1 lemon

Cream butter and sugar, whisk in eggs one at a time, then add 125g chopped mangoes, ground ginger, lemon zest, self raising flour and milk.

Pour cake mixture into a greased 1½ litre ring cake tin. Decorate the top of the cake with the remainder of the Mango Slices. Bake in a pre heated oven 180C for 30 minutes and test with a skewer, if clean when withdrawn, the cake is cooked.
