Dried Mango Cake
Serves 8-10
Ingredients
- 250g Fruit for Life Dried Philippine Mango Slices
- 185g butter, room temp.
- 1 cup caster sugar
- 1 cup self raising flour
- 1 tbs ground ginger
- 3 eggs
- 1/3 cup milk
- zest of 1 lemon
Cream butter and sugar, whisk in eggs one at a time, then add 125g chopped mangoes, ground ginger, lemon zest, self raising flour and milk.
Pour cake mixture into a greased 1½ litre ring cake tin. Decorate the top of the cake with the remainder of the Mango Slices. Bake in a pre heated oven 180C for 30 minutes and test with a skewer, if clean when withdrawn, the cake is cooked. > Print recipe
