Dried Mango Chilli Chutney
Makes 1 Litre
Ingredients
- 500g Fruit for Life Dried Philippine Mango Slices, chopped
- 1/2 red capsicum chopped
- 2 onions chopped
- 2 tspn mustard seeds
- 1 red chilli sliced
- 1 ½ cups white wine vinegar
- 1 cup raisins
- 1 tspn cayenne pepper
- 1 ½ cups water
- 2 tspn grated ginger
- juice of 1 lemon
- 2 garlic cloves sliced
- 1/2 cup brown sugar
Combine all ingredients in large heavy based pot. Simmer on medium - high for 30 minutes or until mangoes are soft and liquid has thickened and reduced. Pour into sterilized jars.
Serve on a baguette with smoked turkey, camembert, rocket and dried mango chilli chutney or add to your favourite sandwich. > Print recipe
