Dried Mango Chilli Chutney

Makes 1 Litre

Ingredients

  • 500g Fruit for Life Dried Philippine Mango Slices, chopped
  • 1/2 red capsicum chopped
  • 2 onions chopped
  • 2 tspn mustard seeds
  • 1 red chilli sliced
  • 1 ½ cups white wine vinegar
  • 1 cup raisins
  • 1 tspn cayenne pepper
  • 1 ½ cups water
  • 2 tspn grated ginger
  • juice of 1 lemon
  • 2 garlic cloves sliced
  • 1/2 cup brown sugar

Combine all ingredients in large heavy based pot. Simmer on medium - high for 30 minutes or until mangoes are soft and liquid has thickened and reduced. Pour into sterilized jars.

Serve on a baguette with smoked turkey, camembert, rocket and dried mango chilli chutney or add to your favourite sandwich.
