Pork, Lemongrass and Dried Mango Lettuce Cups

Ingredients
- 180gFruit for Life Dried Philippine Mango,
roughly chopped
- 1/2 kg pork mince
- 1 red chilli sliced
- 2 sticks of lemongrass sliced
- 1 tbs ginger chopped
- 1 bunch coriander chopped
- 1 onion chopped
- 1/2 red capsicum chopped
- 1/2 cup pine nuts
- 2 garlic cloves sliced
- 3 tbsn fish sauce
- juice of 1 lemon
- iceberg lettuce
Lightly saute onions, capsicum, garlic, chilli, ginger and lemon grass. Add pork, making sure to break up meat so as not to have any lumps. Add pine nuts, coriander, mango, lemon juice and fish sauce. Don’t overcook this dish, should be light and crunchy. Serve in a lettuce cup. > Print recipe
