Drunken Dried Strawberry Crumble

Serves 8

Ingredients

  • 250g Fruit for Life Dried Strawberries
  • zest from 1 lemon
  • 1/2 nip alcohol of choice
  • 100g butter, chopped
  • 1/3 cup brown sugar

Anglaise

  • 1/3 cup plain flour
  • 2 cups thickened cream
  • 1/3 cup oats
  • 1/3 cup caster sugar
  • 1/2 cup shredded coconut
  • 4 egg yolks
  • 1/2 cup almonds, shredded
  • 1 tspn vanilla essence

Place strawberries and lemon zest in just enough water to cover strawberries. Poach on low heat, for about 15 mins or until soft and add alcohol. Set aside. Crumble butter, flour and brown sugar together. Add oats, coconut and almonds. Bake in oven until golden brown. When cool, break up with your fingers.

Anglaise:
Combine cream, caster sugar, egg yolks and vanilla essence into a small pot. Stir until anglaise covers the back of the spoon. In a glass, layer warmed strawberries, anglaise and crumble.
