Dried Strawberry Cream Melting Moments

Ingredients
- 50g Fruit for Life Dried Strawberries
- 1/2 cup icing sugar, sifted
- 250g butter room temp.
- 1/2 cup cornflour
- 1 ½ cups plain flour
Icing
- 50g Fruit for Life Dried Strawberries
- 90g butter
- 200g icing sugar
- 1/3 cup thickened cream
Rub all ingredients excluding strawberries with your fingers. When mixture is well combined, add thinly sliced strawberries and roll into balls the size of a ten cent piece. Place on a greased tray, flatten with the back of a fork. Should make around 36 balls, 18 melting moments. Bake in pre heated oven 160C for 20 minutes.
Icing:
Mix butter, icing sugar, cream and sliced strawberries. When melting moments are cool, spread shortbread with icing mixture and sandwich biscuits together. Dust with icing sugar. > Print recipe
