Pancake Stack with Dried Strawberry Couli and Cream
Serves 4
Ingredients
- 3 eggs
- 2 1/2 cups s/r flour
- 2 cups milk
- 1 tspn vanilla essence
- 1 tspn ground ginger
- 2 tspn ground cinnamon
- 1 tspn butter with every pancake
Strawberry Couli
- 100g Fruit for Life Dried Strawberries
- 1/4 cup caster sugar
To Garnish
To make the pancakes, place all ingredients in a bowl. Make a well in the middle, add eggs, whisk adding milk slowly until smooth.
Couli:
Place Strawberries and sugar in a small pot and cover with water. Simmer until sugar has dissolved. Set aside. Melt tsp butter in a hot pan and pour pancake mixture making a 10cm circle. Drop a couple of strawberries in pancake dough, flip when cooked on one side and place in a low oven. Keep frying pancake mixture until all is cooked. Around 12. Place pancake on serving plates, three cakes per serve. Place cream and strawberry couli between layers. Dust with icing sugar. > Print recipe
