Rocky Road Indulgence

Ingredients

  • 750g milk chocolate
  • 300g marshmallow, coarsely chopped
  • 80g Lion of Sahara Dried Figs, chopped
  • 150g Lion of Sahara Quality
    Dried Mangoes, chopped
  • 150g Lion of Sahara
    Dried Strawberries, chopped
  • 1/4 cup (40g) blanched almonds,
    toasted, coarsely chopped
  • 1/4 cup (55g) pistachios, toasted, halved

Line 18cm x 27cm pan with baking paper, covering the base and extending over the sides of the pan. Combine marshmallows, fruits, almonds and pistachios in a large bowl.

Melt chocolate in a medium bowl over a saucepan of barely simmering water.

Set aside to cool. Working quickly, stir in chocolate and then spread into the prepared pan. Refrigerate until set. Cut into slices.
