Rocky Road Indulgence
Ingredients
- 750g milk chocolate
- 300g marshmallow, coarsely chopped
- 80g Fruit for Life Dried Figs, chopped
- 150g Fruit for Life Philippine Mangoes, chopped
- 150g Fruit for Life
Dried Strawberries, chopped
- 1/4 cup (40g) blanched almonds,
toasted, coarsely chopped
- 1/4 cup (55g) pistachios, toasted, halved
Line 18cm x 27cm pan with baking paper, covering the base and extending over the sides of the pan. Combine marshmallows, fruits, almonds and pistachios in a large bowl.
Melt chocolate in a medium bowl over a saucepan of barely simmering water.
Set aside to cool. Working quickly, stir in chocolate and then spread into the prepared pan. Refrigerate until set. Cut into slices.
