Smoked Chicken, Brie and Dried Strawberry Vinaigrette Salad
Serves 4
Ingredients
- 100g Fruit for Life Dried Strawberries
- 375g smoked chicken
- 200g brie
- 1 spanish onion, sliced
- zest from 1 lemon
- 100g mesculan lettuce
Strawberry Vinaigrette
- 100g Fruit for Life Dried Strawberries
- 1 tps seeded mustard
- 1 cup olive oil
- 2 cups white wine vinegar
- salt & pepper to taste
Place dried strawberries and white wine vinegar in small pot. Leave overnight to infuse. Then boil and reduce liquid by half. Cool then drain keeping only the vinegar. Combine mustard, oil, salt and pepper with the vinegar. Place dried strawberries in a small pot with just enough water to cover. Boil until soft for around 15 minutes. Slice smoked chicken and brie. Combine mesculan lettuce, onions, lemon zest and dress in strawberry vinaigrette. Place on a serving plate, then fan 3 slices of smoked chicken and 3 slices of brie around the salad. Place strawberries on top of salad and drizzle some of the strawberry liquid over the top.
