Smoked Chicken, Brie & Strawberry Pizzetta
Serves 6
Ingredients
- 6 single serve pizza crusts
- 200g brie, thinly sliced
- 225g smoked chicken,
skinned and slivered
- Spiced Strawberry Jam
- Olive oil spray
- 10 sprigs of fresh basil
- 40g baby rocket leaves
Spiced Strawberry Jam
- 150g Fruit for Life Dried Strawberries
- 1 med apple peeled and sliced
- 2 cloves
- 1 tsp lemon zest
- 1 tbn white sugar
- 1 star anise
- ½ tsp mixed spice
- ¼ tsp cayenne pepper
- 1 ½ cups of water
Spiced Strawberry Jam: Place all ingredients in heavy based pot, simmer on medium heat for about 1 hour, stirring occasionally. If jam dries out, add more water. When jam is ready strawberries should be soft, sticky and plump. Serve on pizzetta or your favourite sandwich.
Pizzetta: Preheat oven 180C. Place pizza crusts on baking trays. Spray lightly with oil. Top with smoked chicken, brie and Spiced Strawberry Jam. Sprinkle with basil. Bake 5-6 minutes until cheese melts. Serve warm topped with rocket. > Print recipe
