Wild Fig, Caramelised Onion and Feta Tarts

  • 24 Fruit for Life Wild Figs
  • 100g crumbled feta cheese
  • 3 sheets puff pastry
  • Caramelised Onion
  • 4 medium onions
  • 2 tbsn olive oil
  • 4 tspn balsamic vinegar

Peel and finely slice onions. Heat oil in a medium saucepan over medium heat. Add onions and balsamic vinegar and stir to coat onion. Cook for 10 minutes stirring occasionally ensuring that the onions aren’t sticking or colouring too quickly. Cover and reduce heat to low. Cook for about 40 minutes, stirring every few minutes and continuously check that they are not burning.

While the onion is cooking cut 24 tart sized circles of puff pastry. Press the circles into patty cake tins. When the onion is cooked place a spoonful in each pastry base and cover with crumbled feta. Top each tart with a wild fig. Bake in a moderate oven for about 10 minutes or until the pastry puffs around the edges and browns slightly.
